I have about a dozen colors by now. I use mostly grays, but right now I'm working on an EPP project with a lot of white so I'm working with Aurifil 2021. I don't usually cut all my fabrics out first, I tend to cut out what I need for a few blocks or a section as I go, especially with a complicated project. If I'm machine piecing, I tend to do all my cutting at the beginning (assuming I know exactly what I'm doing and am confident it's going to work. If not, I cut enough for a couple of 'test' blocks.) but if I'm hand piecing then I tend to prep a block at a time, or more if the block is fairly simple. As for cutting out, I hate it! I tend to cut out what I have to to get started, then do the rest as I need it. I tend to change my mind often about what I want to do, so this way works best for me.
